Restaurant: Restaurant / Dining Information: The outstanding talent of our Executive Head Chef, Steve Roberts, was first recognised some years ago when he won Welsh Student Chef of the Year, and he has gone from strength to strength ever since. Steve manages a brigade of eleven chefs who produce freshly prepared dishes not only for our Waterside Bar & Restaurant, but also for weddings, conferences and special events for up to 400 people. His new menus have just been launched featuring dishes that are full of flavour. The choice at lunch time goes from delicious breads and panini with a great range of fillings, to pastas and more substantial dishes, like local Chirk trout grilled with lemon, parsley and almonds, or braised lamb shank on crushed new potatoes with basil and olive oil. Steves dinner menu provides an equally tempting choice, from the traditional deep fried cod fillet with beer batter, mushy peas and chunky chips to an innovative salmon fillet poached in coconut milk with chilli noodles and lemon grass. There is also an extensive menu of grills featuring a choice of beef steaks along with gammon, trout and salmon. Vegetarians are also well catered for throughout the day. In addition to the standard menus, Steve will be introducing special dishes from time to time, as seasonal produce becomes available. His basic philosophy is to produce simple food that tastes as good as it looks.
